Chef Manager Corey Hernandez
Corey Hernandez is excited to lead The Browning School’s dining service program. Prior to joining Cater To You, Corey spent 12 years working in some of New York City’s finest establishments, including the Michelin-starred Junoon. Additionally, he received his start in one of Danny Meyer’s many restaurants.
His culinary journey began at Hudson County Community College Culinary Arts School in Jersey City, NJ. There, he first learned the foundations of French cuisine and techniques that deeply influenced his approach to cooking. “Throughout my career, I’ve been fortunate to work in a wide variety of kitchens alongside people from all walks of life,” Corey said. “Whether it was a celebrity chef or someone fresh out of culinary school, I learned early on that everyone has something to teach you.”
Chef Corey has always found joy in serving others. What he loves most about being a chef, cooking, and food, is its power to bring people together across cultures, backgrounds, and generations. “Food should be a communal experience, something that unites us,” he explained. At Browning, that sentiment is especially true. “Serving and getting to know the boys and this community has been one of the greatest joys of my life,” he noted. “Since day one, I’ve had the opportunity to connect with them through conversation about food and cooking, and those moments continue to inspire me daily.”
Chef Corey’s roots definitely influence his taste in food. He is of Cuban descent, making white rice, black beans, and ropa vieja his favorite food. In terms of his cooking style, however, he is heavily influenced by the wide range of kitchens he has worked in and the variety of cuisines he has had the opportunity to explore. “I try to stay grounded in using fresh, seasonal ingredients while incorporating global influences,” Corey stated. Interestingly, his favorite dish to make is pasta. He thoroughly enjoys the process of making pasta from scratch. “There is something incredibly satisfying about starting with just flour, eggs, and water, and turning it into a beautiful blank canvas for creativity,” he explained.
When Chef Corey is not busy in the kitchen, you can find him at the farmers market or cheering on his nieces and nephews at their little league games. He revealed, “If I’m not preparing lunch for everyone, I’m in the stands, eating a hot dog, and soaking in moments with family.”
