INGREDIENTS

2 quarts water

1.5 cups vinegar

1/3 cup kosher salt

2 tbsp fresh garlic cloves

2 bay leaves

2 tsp peppercorn

2 tsp coriander seed

1 large bunch of fresh dill

4 lbs Kirby cucumbers

 

STEP 1: COMBINE

Combine water, salt, garlic, bay leaves, coriander, and vinegar in a large bowl.

 

STEP 2: WHISK

Whisk well until all of the salt is dissolved.

 

STEP 3: ARRANGE

Arrange layers of Kirby cucumbers and dill in a large mason jar.

 

STEP 4: ADD BRINE

Fill the mason jar with the brine.

 

STEP 5: REFRIGERATE

Refrigerate the jar of cucumbers in their brine.

 

STEP 6: ENJOY!
